Challis Pumpkin Challenge
Happy Almost Halloween!! It seems that most of you are already in the full swing of of the Halloween / Fall season. Jilly and I certainly are. We thought it would be fun if we played our own version of “Iron Chef” and use Pumpkin as the secret ingredient. In other words, have a whole meal where every dish has pumpkin in it.
I say ‘we’ a lot on this blog but this time it was ALL Jill (I literally did nothing this weekend but work out and lay around the house, wondering what the point of being in great shape is if I am too tired to do anything)
The Menu:
First off, we had to do cinnamon-sugar roasted pumpkin seeds, since we had so many pumpkins this year. Jill roasted a couple of pie pumpkins to turn into Pumpkin Lasagna and Pumpkin Pie. We happened to have pumpkin beer in the fridge, so that felt like the perfect addition to our pumpkin-filled meal.
The lasagna was twice as large as any we’ve ever made in the past, so it looks like we will be eating pumpkin lasagna the rest of the week! To get your taste-buds salivating, I’ll briefly describe what lay in the pumpkin lasagna. It consisted of a homemade vegetable and beef tomato sauce (but could have also been done w/out the beef if you are vegetarian), a creamy sage, pumpkin and ricotta cheese concoction, a heaping pile of mozzarella and pecorino romano cheeses, walnuts, carmelized onions and fresh roasted garlic. The pie was a standard, yet delicious pumpkin pie. The beer was also the same. I say Iron Chef Worthy for sure!
