Moab Reunion

We went back down to Moab for a short weekend of climbing, camping and a mini Challis’ family reunion. We arrived on friday around 5pm and planned to camp at the KOA since that’s where everyone else was planning to stay. It was packed! Plus it didn’t really feel like camping, as there were cabins, bathrooms, showers, a swimming pool, shopping area, even wireless internet! But we were not there for us, we were there to visit with Jake’s fam., so we sucked it up and settled in.

A-Coon-ama-TaTa!

Mama CoonGet it?!?. It’s my hokey way of saying farewell to our furry friends who have been living under our deck for the past month. We had some suspicions about the large raccoon prowling around our neighborhood, but only recently discovered that it’s home was under our deck. We assumed it was male since it was so large, but later discovered that “he” is actually a “she” because she has been spotted with babies. We dubbed her “Mama-Coon”, as she is a mom as well as a raccoon; seemed a fitting name!

A Magical Birthday Vacation

AHH Disney, the most magical place on earth. There is no other place like it in the world…that is true. We went to Disney with my parents and our niece, Lucy for 5 days. Oh so much to pack into one little blog post, but I figure I would touch on all the highlights from each day…and of course show all the super fantastic photos of our vacay. It was also the celebration of my birthday, so a double-whammy for me!

Snowy Sunday Vegan Cinnamon Rolls

Seeing a healthy looking vegan can be a rare sighting. It is, perhaps, on-par with seeing a Yeti, Big Foot or The Lochness Monster. While Jake and I ARE NOT yet full-fledged vegans; approximately 9 out of 10 meals we eat do, in fact, fall into the “classic category” of vegan meals; i.e. no ingredients in ‘said meal’ have a mother or come from a mother. In addition, we don’t use processed foods for cooking; our pantry is STOCKED with high-quality ingredients. But, I do believe that we could be considered one of the few healthy-looking ‘vegans’ on the market. 🙂

How to build a bed in a van

Since we’ve been training hard for climbing all last fall and winter we decided to try and make the most of spring, summer & fall and go on a RAMPAGE in Colorado. At the same time, our tick list of places in/around Colorado have expanded to a hefty one…as far as we could tell there was only one solution to this. Mini-Road-Trip-Mania!

New Frontiers

For the past few months, I have been working on making myself healthier…Really for the past 10 years since moving to Boulder, Colorado. But let me digress a little bit.

Boulder is known for its community’s “healthy” lifestyle. It’s actually more of the stereotype of overly healthy, granola eating, hippie cultured, pot smoking people who somehow manage to NOT work, do yoga all day long and afford to live in this extraordinary place seemingly without effort (and lots of expendable cash). The reality is not quite so extreme, yet it does lend itself to the stereotype more oft than not. There are a lot of freeloading “hippies”; a lot of pot smokers (even before pot was legal); a lot of free-thinking, overly sensitive foodies; a lot of very high-level athletes; Trophy wives who only have to look good for their husbands and raise the kids; and RICH PEOPLE. But, there are also a TON of very average, normal people too.
