Homemade Almond Milk & Granola

I am just loving this whole “cooking foods from scratch” thing that we’ve been embarking on for the last 8 months! This week we explored the adventures of homemade almond milk, which we use in our fruit and veggie smoothies that we make each morning. I found almond milk is super easy and with the leftover pulp it makes a really yummy granola! And now I’d like to share with you those recipes so that all of you blog readers can make your very own almond milk and/or granola.

You’re Not Hardcore Unless You live Hardcore: De-Lux Hot Dog Night

ingredientsI have been a total slacker on writing posts about training and climbing. The truth of it is that its not particularly interesting to write about (or for our vapid readers, read about).

So I will just say that we’ve been training super hard and tomorrow we are putting a top rope on a potential assent of a 5.13a “Barely Eagle” at our favorite crag in Boulder Canyon, Eagle Rock. Although these plans may change as we have some friends visiting from Chicago and if we take them climbing it will be someplace super easy like the Sport Park (where we take all newbies to climb).

Best Damn Vegan Meatballs

Last week, Jake and I went to Native Foods Cafe, which is vegetarian/vegan restaurant in Boulder. We were AMAZED at how tasty the food was, especially since he got a “bacon cheeseburger” that was vegan – and OH SO GOOD, and I got a meatball sub, which was also vegan and OH SO GOOD AGAIN. So, I thought, I want to try to make vegan meatballs, but make it as good as the Native Foods Cafe version.

Southern Comfort Friday-Vegan Style

biscuitsWell hello all of you people out in Internet Land. Today is Friday, normally a ‘rest day’ for us (anything that is not a climbing day is called a rest day in our book). We decided that we’d try to go for an evening sail, but unfortunately the weather was not on our side. We knew it was going to rain and we love rain/wind, but thunder and lightening means no-go for sailing…so we decided to cook up our own storm instead!

We can pickle that!

We just got back from FL yesterday (that blog post will come later this week as we still have tons of pictures to siphon through), so of course our food stores in-house were very low. At this point in our lives, we make just about everything from scratch and we had nothing. Clearly a gigantic grocery shopping trip was in order to both Whole Foods and COSTCO…and that’s when the day got out of control. While shopping, we decided that today was the day we would try pickling some of our freshly purchased produce items…we have been talking about wanting to do this for weeks, so it seemed like a perfect activity. We picked up several canning jars, vinegar, cucumbers, onions, beets and carrots (among many many many other items) for pickling.

Snowy Sunday Vegan Cinnamon Rolls

Seeing a healthy looking vegan can be a rare sighting. It is, perhaps, on-par with seeing a Yeti, Big Foot or The Lochness Monster. While Jake and I ARE NOT yet full-fledged vegans; approximately 9 out of 10 meals we eat do, in fact, fall into the “classic category” of vegan meals; i.e. no ingredients in ‘said meal’ have a mother or come from a mother. In addition, we don’t use processed foods for cooking; our pantry is STOCKED with high-quality ingredients. But, I do believe that we could be considered one of the few healthy-looking ‘vegans’ on the market. 🙂
